If you have a question for any of our experts, please visit our Just Ask page. A good substitute for buttermilk in baked goods is to sour regular milk with lemon juice or vinegar. For every cup of buttermilk called for in a recipe, measure 1 tablespoon (15 mL) of lemon juice or vinegar into a glass measuring cup. Pour in the milk to the 1 cup (250 mL) line and let stand for 5 minutes. Whisk before using. Heather Howe Test Kitchen Manager Canadian Living Magazine
