When should a pie shell be baked before adding the filling?

The pie shell is prebaked when a cooked filling is added to it. Lemon Meringue Pie is the classic example of this. As well, a pie shell is often partially prebaked at a high temperature (baked "blind" with foil and weights to prevent it from shrinking and bubbling) when its filling requires a lower temperature such as a custard filling. Reliable recipes give instructions when prebaking is required. Happy baking, Elizabeth Baird
