I have a question regarding a recipe that appeared in your December issue of Canadian Living.... I made the Port Jelly recipe. I was careful to follow the recipe closely, but after 12 hours I notice the jelly had not set and was quite runny - more like Port "sauce". It has been about 24 hours since I made the jelly and it is slightly thicker, but still not as thick as I think it should be. Is this normal?Can you give me any ideas of where I might have gone wrong? Thank-you!

Liquid pectin and pectin crystals both have an expiry date on them. If the date has passed the jelly or jam will not set properly. Pectin, both liquid and crystals, set within 24 hours if used before the expiry date. Heather Howe Test Kitchen Manager Canadian Living Magazine
