When I was preparing the dough for butter cardamom cookies and came to knead the dough it would not hold together. I always have this problem.

It may be in the way you are measuring your flour. In the Test Kitchen, we spoon the flour into the measuring cup (for dry ingredients, not liquid) and sweep off the excess with the flat edge of a knife. If you scoop the flour out of the bin you can add up to 2 tablespoonfuls of extra flour for every cup. If you tap it on the counter you will add even more. Where this is noticeable is in baked goods such as cookies because baking is more scientific in terms of ingredient amounts. Heather Howe Test Kitchen Manager Canadian Living Magazine
