Regarding your recipe Roast Prime Rib with Rosemary Jus Lie: Do I put the lid on the roasting pan when I place it in the oven? Also, am I placing the roast ON the rack, with the onion mixture below?

You don't need to put the lid on the roaster for the Roast Prime Rib with Rosemary Jus Lie. In the test kitchen we use shallow roasting pans without lids for all our roasting. You don't need a rack as the roast is resting on its bones -- they form a natural arched rack. As the beef roasts the juices come down into the lovely bed of onions, and together they make a very delicious liquid. The idea of roasting over a bed of onions or other vegetables is not common, but we do recommend this method from time to time when we think it will benefit the sauce. Good luck, Elizabeth Baird
