My husband is on a restricted diet to reduce the acid in his system. The foods he needs to avoid most are tomatoes, red meat, peppers and potatoes. I am having great difficulty finding recipes that don't have a tomato base, like chili, lasagna, etc. The tomato-based products are the hardest to find replacements for. Do you have any suggestions?
There are definitely lots of tomato based recipes out there. I would suggest looking for recipes using stock or bechamel sauce as a base. You can make a stock based chili such as a white chili with chicken, beans and chicken stock instead of tomatoes. Use the regular chili seasonings for a delicious dish. In terms of lasagna, we have done ones with bechamel or milk based sauces that are very tasty. Hope these suggestions help.
Try entering lasagna in our "cook" search tool on the top right corner of any page, and you will find several tomato-free versions of lasagna such as Squash and Caramelized Onion Lasagna.
