Remembering the horrible evaporated milk my Grandmother used in her coffee makes me bypass all recipes calling for this. Can regular milk be substituted? Thanks.

You can use milk or light cream instead of evaporated milk. We use evaporated milk for its enriched calcium content, and usually put it in a recipe where there is enough flavour to counteract the cooked milk taste.
