How does one poach chicken breasts? Do you start with cold or boiling water?

Here is a quick recipe for poaching chicken breasts: Bring about 3 inches of cold water in large skillet to simmer, add a bay leaf, strip of lemon, pinch each of salt and pepper. Add 2 boneless skinless chicken breasts, cover and poach until no longer pink inside, about 12 minutes. Let cool. Hope that helps. Kate Dowhan
