I recently bought a garlic roaster but I'm not sure how to use it. How hot should the oven be and how long do I roast the garlic?

Before putting the garlic in the roaster, you could toss it with 1 tbsp (15 mL) olive oil and a pinch of salt and pepper, if you wish. Roast in a 350 F(180 C) oven, until the garlic feels tender when you touch it. It will be golden in colour and should take approximately 1 hour. If you have back issues, look at the May 2004 issue of Canadian Living, which contains a garlic feature with lots of great garlic recipes. Kate Dowhan Canadian Living Test Kitchen
