I have a cookie recipe of my grandmother's that calls for 1 oz. of ammonium bicarbonate. What can I substitute for this and in what quantities? thanks.

Ammonium bicarbonate was used as a leavening agent before baking powder and baking soda became available. I was unable to find any equivalents for it. However you could try using baking powder or soda. Look for a similar cookie recipe for a starting point. -- Heather Howe
