2 tbsp (25 mL) butter
3 onions, thinly sliced
1 tbsp (15 mL) balsamic or wine vinegar
1 tbsp (15 mL) liquid honey
1 tsp (5 mL) dried thyme
5 cups (1.25 L) cubed day-old baguette
1 cup (250 mL) diced brie cheese
6 eggs
1 cup (250 mL) each 10% cream and milk
1/2 tsp (2 mL) each ground nutmeg, salt and pepper
Preparation:
In large skillet, melt butter over medium heat; fry onions, stirring often, until deep golden brown, about 25 minutes. Stir in vinegar, honey and thyme.
In large bowl, toss together bread, cheese and onion mixture; spoon into shallow greased 8-cup (2 L) gratin dish.
In bowl, whisk eggs, cream, milk, nutmeg, salt and pepper; pour over bread mixture and press. Let stand until liquid is absorbed, 20 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)
Bake in 350°F (180°C) oven until crisp, browned and knife inserted in centre comes out clean, about 45 minutes
