Caramelized Onion and Brie Bread Pudding

Ingredients
- 2 tbsp 2tbspbutter
- 3 3oniononions, thinly sliced
- 1 tbsp 1tbspbalsamic vinegar or wine vinegar
- 1 tbsp 1tbspliquid honey
- 1 tsp 1tspdried thyme
- 5 cups 5cupscubed day-old baguettebaguettes
- 1 cup 1cupdiced Brie cheese
- 6 6eggeggs
- 1 cup 1cup10% cream
- 1 cup 1cupmilk
- 1/2 tsp 1/2tspground nutmeg
- 1/2 tsp 1/2tspsalt
- 1/2 tsp 1/2tsppepper
Preparation
In large skillet, melt butter over medium heat; fry onions, stirring often, until deep golden brown, about 25 minutes. Stir in vinegar, honey and thyme.
In large bowl, toss together bread, cheese and onion mixture; spoon into shallow greased 8-cup (2 L) gratin dish.
In bowl, whisk eggs, cream, milk, nutmeg, salt and pepper; pour over bread mixture and press. Let stand until liquid is absorbed, 20 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)
Bake in 350°F (180°C) oven until crisp, browned and knife inserted in centre comes out clean, about 45 minutes
