You can blanch the beans ahead of time; just wrap in a towel, enclose in a plastic bag, and refrigerate for up to 24 hours.

Ingredients

  • 2 lb green beans , trimmed2 lb green beans, trimmed
  • 2 tsp extra-virgin olive oil 2 tsp extra-virgin olive oil
  • 1 onion , sliced1 onion, sliced
  • 1/2 tsp salt 1/2 tsp salt
  • 1/2 tsp pepper 1/2 tsp pepper

Preparation

In pot of boiling salted water, cover and blanch beans until tender-crisp, about 4 minutes; drain and pat dry.

In large skillet, heat oil over medium heat; fry onion, stirring occasionally, until golden, about 10 minutes.

Add beans, salt and pepper; cook over medium heat, stirring often, until tender and hot, about 1 minute.
