Ingredients

  • 1 1head cauliflower, (about 2 lb/1 kg)
  • 1-1/2 cups 1-1/2cupsdiced spiced Gouda, (cumin, coriander or fenugreek) cheese
  • 1 1 thick (1/2-inch/1 cm) slice Black Forest ham, (about 8 oz/250 g), diced
  • 1 cup 1cupdiced sweet onion
  • 1/3 cup 1/3cupdiced sour gherkin pickles or sweet gherkin pickles
  • 1 1appleapples, cored and diced
  • 1/4 cup 1/4cupmayonnaise
  • 3 tbsp 3tbspfinely chopped fresh parsley
  • 3 tbsp 3tbspfinely chopped fresh chivefresh chives
  • 3 tbsp 3tbspsour cream
  • 4 tsp 4tspcider vinegar
  • 1 tbsp 1tbspgherkin juice, from jar
  • 1-1/2 tsp 1-1/2tspcurry powder
  • 1/2 tsp 1/2tspgranulated sugar
  • 1 dash 1dashhot pepper sauce
  • 1 pinch 1pinchsalt
  • 1 pinch 1pinchpepper
  • 1 1head Boston leaf lettuce, separated

Preparation

Remove any leaves from cauliflower. In large pot of boiling salted water, blanch cauliflower until tender-crisp, 3 minutes. Drain and chill under cold water; drain well. Cut into florets. Place in large bowl along with cheese, ham, onion, gherkins and apple.

Whisk together mayonnaise, parsley, chives, sour cream, vinegar, gherkin juice, curry powder, sugar, hot pepper sauce, salt and pepper. Scrape over cauliflower mixture; toss to coat.

Line plates with lettuce leaves. Top with salad.
