2 cups (500 mL) shredded old cheddar cheese (8 oz/250 g)
1/2 cup (125 mL) crushed salted soda crackers
1 hard-cooked egg, chopped
1/3 cup (75 mL) finely chopped sweet pickle
1/3 cup (75 mL) minced green onion
1/3 cup (75 mL) mayonnaise
3 tbsp (50 mL) finely chopped sweet green pepper
2 tbsp (25 mL) chopped pimiento
1 tbsp (15 mL) chopped stuffed olives
Preparation:
In large bowl, combine cheese, crackers, egg, pickle, onion, mayonnaise, green pepper, pimiento and olives. Using hands or wooden spoon, mash until well combined and holding together. Form into 12-inch (30 cm) log. Wrap in waxed paper and refrigerate for about 1 hour or until firm or for up to 2 days.
