Garnish the log with sliced olives and parsley sprigs and serve with crackers.

Ingredients

  • 2 cups shredded old cheddar cheese, (8 oz/250 g)
  • 1/2 cup crushed salted soda crackers
  • 1 hard-cooked egg, chopped
  • 1/3 cup finely chopped sweet pickle
  • 1/3 cup minced green onion
  • 1/3 cup mayonnaise
  • 3 tbsp finely chopped sweet green pepper
  • 2 tbsp chopped pimento
  • 1 tbsp chopped stuffed olives

Preparation

In large bowl, combine cheese, crackers, egg, pickle, onion, mayonnaise, green pepper, pimiento and olives. Using hands or wooden spoon, mash until well combined and holding together. Form into 12-inch (30 cm) log. Wrap in waxed paper and refrigerate for about 1 hour or until firm or for up to 2 days.
