Garnish the log with sliced olives and parsley sprigs and serve with crackers.
Ingredients
- 2 cups shredded old Cheddar cheese , (8 oz/250 g)2 2cups cupsshredded old cheddar cheese, (8 oz/250 g)
- 1/2 cup crushed salted soda crackers 1/2 1/2cup cupcrushed salted soda crackersalted soda crackers
- 1 hard-cooked egg , chopped1 1hard-cooked eggeggs, chopped
- 1/3 cup finely chopped sweet pickle 1/3 1/3cup cupfinely chopped sweet pickle
- 1/3 cup minced green onion 1/3 1/3cup cupminced green onion
- 1/3 cup mayonnaise 1/3 1/3cup cupmayonnaise
- 3 tbsp finely chopped sweet green pepper 3 3tbsp tbspfinely chopped sweet green pepper
- 2 tbsp chopped pimento 2 2tbsp tbspchopped pimento
- 1 tbsp chopped stuffed olives 1 1tbsp tbspchopped stuffed olivestuffed olives
Preparation
In large bowl, combine cheese, crackers, egg, pickle, onion, mayonnaise, green pepper, pimiento and olives. Using hands or wooden spoon, mash until well combined and holding together. Form into 12-inch (30 cm) log. Wrap in waxed paper and refrigerate for about 1 hour or until firm or for up to 2 days.
