Tested Till Perfect

It takes no time at all to bake a batch of protein-enriched scones when the biscuit mix is all ready. You can also make plain tea biscuits by mixing 2 cups (500 mL) mix with 2/3 cup (150 mL) water, then kneading the dough 8 to 10 times before cutting and baking as for scones.

Servings: 9

Ingredients:

    2 cups biscuit mix
    2 eggs, lightly beaten
    1/2 cup shredded Cheddar cheese
    1/3 cup milk

Preparation:

In bowl, stir together biscuit mix, eggs, cheese and milk until mixture forms ball, being careful not to overmix.

On lightly floured surface, roll out dough to 3/4-inch (2 cm) thickness. Using floured 2-1/2-inch (6 cm) round cutter, cut out circles and arrange about 2 inches (5 cm) apart on ungreased baking sheet; bake in 450°F (230°C) oven for 12 to 15 minutes or until lightly browned.
