Here's a very versatile seasoning mix that has lots of flavour and jazzy colour to quickly bake up your catch of the day or pick of poultry at the supermarket. Double or triple this easy mix and keep it in a resealable plastic container or bag in a cool place for any cottage, boating or camping trip, or quick home supper.

Ingredients

  • 1/4 cup cornmeal
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp all-purpose flour
  • 1 tbsp paprika
  • 1 tsp dried basil
  • 1/4 tsp each of salt and pepper
  • 2 tbsp milk
  • 1 lb chicken breasts, boneless, skinless or firm fish fillets
  • 1 tbsp vegetable oil

Preparation

In shallow bowl, stir together commeal, Parmesan cheese, flour, paprika, basil, salt and pepper.

Place milk in shallow dish; dip chicken into milk, then into cornmeal mixture, turning to coat all over.

In large skillet, heat oil over medium heat; cook chicken, turning once, for about 10 minutes or until crispy outside and no longer pink inside. 

Additional information :

For fish: Heat oil in large skillet over medium heat; cook fish for about 5 minutes, turning once, until golden and flakes easily when tested with fork.
