A touch of Caribbean jerk-type seasoning and bright, sweet mango bring warmth to any winter gathering.
Ingredients
- 1 tbsp 1tbspsoy sauce
- 1 tbsp 1tbsplemon juice
- 1 tsp 1tspallspice
- 1/2 tsp 1/2tspcinnamon
- 1/4 tsp 1/4tspcayenne pepper
- 1/4 tsp 1/4tspchili powder
- 1/4 tsp 1/4tspsalt
- 1/4 tsp 1/4tsppepper
- 2 2boneless skinless chicken breastboneless skinless chicken breasts
- 1 1mangomangoes
Preparation
In large bowl, combine soy sauce, lemon juice, allspice, cinnamon, cayenne pepper, chili powder, salt and pepper. Cut chicken into 1-inch (2.5 cm) cubes. Add to bowl and stir to coat; let stand for 10 minutes.
Meanwhile, peel and cut mango into 1-inch (2.5 cm) chunks.
In large nonstick skillet, cook chicken over medium-high heat, stirring often, for about 5 minutes or until chicken is no longer pink inside. Thread 1 piece each chicken and mango onto toothpick.
