Chicken Mango Skewers

A touch of Caribbean jerk-type seasoning and bright, sweet mango bring warmth to any winter gathering.

    1 tbsp (15 mL) each soy sauce and lemon juice
    1 tsp (5 mL) allspice
    1/2 tsp (2 mL) cinnamon
    1/4 tsp (1 mL) each cayenne pepper, chili powder, salt and pepper
    2 boneless skinless chicken breasts
    1 mango

Preparation:

In large bowl, combine soy sauce, lemon juice, allspice, cinnamon, cayenne pepper, chili powder, salt and pepper. Cut chicken into 1-inch (2.5 cm) cubes. Add to bowl and stir to coat; let stand for 10 minutes.

Meanwhile, peel and cut mango into 1-inch (2.5 cm) chunks.

In large nonstick skillet, cook chicken over medium-high heat, stirring often, for about 5 minutes or until chicken is no longer pink inside. Thread 1 piece each chicken and mango onto toothpick.
