For wonderful flavour, grill the chicken (see Peanutty Chicken Pitas). Serve this salad with fresh corn and peaches for dessert.

Ingredients

  • 4 cups penne pasta, (about 3/4 lb/375 g)
  • 1/2 lb snow peas, trimmed
  • 2 large tomatoes
  • 1/3 cup light mayonnaise
  • 1/4 cup buttermilk
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cooked chicken breasts, cut_into chunks
  • 1/3 cup chopped fresh basil
  • Fresh basil leaves

Preparation

In large pot of boiling water, cook pasta for about 11 minutes or until tender but firm. Add snow peas; cook for 1 minute. Drain; refresh under cold water and drain again.

Meanwhile, core tomatoes; chop coarsely and set aside. Quarter remaining tomato; pur?in food processor or blender. Add mayonnaise, buttermilk, garlic, salt and pepper; pur?until smooth. (Dressing can be covered and refrigerated for up to 8 bours. Whisk before continuing.)

In large bowl, toss pasta and snow peas with reserved tomato, chicken, chopped basil and dressing. Taste and adjust seasoning. Garnish with basil leaves.
