Chicken Pita Packages
Great lunches for home or office
Servings: 4
Ingredients:

1/4 lb (125 g) broiled chicken breast
1/2 cup (125 mL) thin cucumber slices
1/4 lb (50 mL) low-fat yogurt
1/4 lb (50 mL) unsalted peanuts
2 6-inch (15 cm) pita bread rounds
salt and pepper
alfalfa sprouts
Preparation:
Cut chicken into small strips; combine with cucumber slices, yogurt, peanuts, and salt and pepper to taste.
Transfer to 4 small plastic containers and cover tightly.
Split pita rounds in half and pack half piece for each sandwich.
Wrap alfalfa sprouts separately. At lunch time, fill pita half with chicken mixture and top with alfalfa sprouts.
