Great for packing, and bursting with flavour, this salad can be doubled for a larger crowd and makes a tasty summer sandwich spooned into lettuce-lined pita breads.

Ingredients

  • 1 can (19 oz/540 mL) chickpeas, drained and rinsed
  • 3/4 cup thinly sliced celery
  • 1/2 cup thinly sliced sweet onions, such as Vidalia
  • 1/4 cup thinly sliced radishes
  • 1 tbsp minced fresh parsley
  • 1/2 cup grape tomatoes or cherry tomatoes, quartered
  • Hint of Lemon Dressing:
  • 1/4 cup light mayonnaise
  • 2 tbsp plain yogurt
  • 1-1/2 tsp Dijon mustard
  • 1 tsp grated lemon rind
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

Hint of Lemon Dressing: In large bowl, whisk together mayonnaise, yogurt, mustard, lemon rind, salt and pepper.

Add chickpeas, celery, onions, radishes and parsley; toss to coat. (Make-ahead: Cover and refrigerate for up to 24 hours.) Add tomatoes; toss to coat.
