Chickpea Salad with Hint of Lemon Dressing
Great for packing, and bursting with flavour, this salad can be doubled for a larger crowd and makes a tasty summer sandwich spooned into lettuce-lined pita breads.

1 can (19 oz/540 mL) chickpeas, drained and rinsed
3/4 cup (175 mL) thinly sliced celery
1/2 cup (125 mL) thinly sliced sweet onions, such as Vidalia
1/4 cup (50 mL) thinly sliced radishes
1 tbsp (15 mL) minced fresh parsley
1/2 cup (125 mL) grape tomatoes or small cherry tomatoes, quartered
Hint of Lemon Dressing:
1/4 cup (50 mL) light mayonnaise
2 tbsp (25 mL) plain yogurt
1-1/2 tsp (7 mL) Dijon mustard
1 tsp (5 mL) grated lemon rind
1/2 tsp (2 mL) each salt and pepper
Preparation:
Hint of Lemon Dressing: In large bowl, whisk together mayonnaise, yogurt, mustard, lemon rind, salt and pepper.
Add chickpeas, celery, onions, radishes and parsley; toss to coat. (Make-ahead: Cover and refrigerate for up to 24 hours.) Add tomatoes; toss to coat.
