Chili Cheddar Burgers with Salsa
Keep a patty for lunch the next day. Your child can warm it up in the microwave to pop into a hamburger bun at school. Send lettuce and tomatoes in separate containers for a fun, tasty lunch idea using leftovers.

2 eggs
1/4 cup (50 mL) water
1 cup (250 mL) shredded extra-old cheddar cheese
1/2 cup (125 mL) dry bread crumbs
1 onion, finely grated
4 tsp (20 mL) chili powder
3/4 tsp (4 mL) each salt and pepper
2 lb (1 kg) lean ground beef
8 hamburger buns
1 cup (250 mL) thick salsa
Preparation:
In large bowl, beat eggs with water; stir in cheese, bread crumbs, onion, chili powder, salt and pepper. Add beef; mix just until combined. Shape into eight 3/4-inch (2 cm) thick patties. (Make-ahead: Wrap, separated by waxed paper, and refrigerate for up to 24 hours or freeze for up to 1 month; thaw in refrigerator.)
Place on greased grill over medium heat; close lid and grill, turning once, until no longer pink inside and digital thermometer inserted sideways into centre reads 160°F (71°C), about 15 minutes.
Toast buns if desired. Place each burger in bun; top burger with salsa.
