I am most interested in your recipes but do enjoy many of your other very informative and timely articles. I have a question about a recipe that appeared in the January 2008 issue on page 71 "Camembert Cheesecakes" - I am not sure what is meant by "mini cheesecake cups" - are these mini springform pans or are they more like a custard cup which would require inverting the finished cheesecake onto the plate ? I would like to make these as a first course for my Easter dinner.

The mini cheesecake pan is like a muffin pan but each hole has a removable bottom so you can push the cheesecakes out of the pan and they will have nice clean square sides, just like a cheesecake from a spring-form pan but in miniature.
