Raitas are yogurt-based side dishes that are often served with meals as a palate cooler and refresher. A wide range of ingredients, usually in combination with fresh herbs, are added to full-fat yogurt for raita — from cucumber to the tropical mango combined with succulent dates in this version.
Ingredients
Preparation
In small skillet, toast cumin seeds over medium heat until beginning to darken, about 1 minute; let cool. With side of knife, coarsely crush seeds; set aside.
In small bowl, stir together yogurt, dates, mango, lime juice, mint and salt. (Make-ahead: Cover and refrigerate for up to 24 hours.) Sprinkle with cumin seeds.
