Chunky Pear Applesauce
Give latkes a zing with this spiced pear applesauce. For an attractive presentation, you can leave the spices in the sauce. Use a sweet-tart apple that softens easily, such as McIntosh or Gravenstein.

2 pears, peeled and cored
2 apples, peeled and cored
2 tbsp (25 mL) lemon juice
4 tsp (20 mL) granulated sugar
Pinch salt
6 whole cloves
2 whole star anise
1 stick (about 2 inches/ 5 cm long) cinnamon
Preparation:
Cut pears into bite-size chunks; chop apples. In small saucepan, combine pears, apples, lemon juice, sugar, salt, cloves, star anise, cinnamon and 2 tbsp (25 mL) water. Cover and bring to simmer; cook for 10 minutes. Uncover; cook until pears are very tender and apples break down to make thick sauce, 12 to 15 minutes. Let cool. (Make-ahead: Cover and refrigerate for up to 3 days; serve at room temperature.)
