Waldorf flavours meld beautifully with flavours of the Far East to enhance this chicken salad. Poach 2 lb (1 kg) of boneless chicken breasts to make 4 cups (1 L) cubed chicken.
Ingredients

4 cups (1 L) cubed cooked chicken
1 cup (250 mL) chopped celery
1/4 cup (50 mL) chopped green_onions
2 apples, cubed
1/4 cup (50 mL) raisins
1/4 cup (50 mL) white_wine or orange juice
2 tsp (10 mL) curry_powder
3/4 cup (175 mL) light mayonnaise
1/4 cup (50 mL) light sour_cream
2 tbsp (25 mL) mango_chutney
2 tbsp (25 mL) slivered preserved ginger
Preparation
In bowl, toss together chicken, celery, onions and apples. In small saucepan, combine raisins, wine and curry; heat until raisins are plump. Drizzle over chicken mixture.
In separate bowl, combine mayonnaise, sour cream, chutney and ginger. Pour over chicken mixture and stir gently to coat.
