Clean-Out-the-Crisper Creamy Soup

Put on your fuzzy slippers and tuck into a bowl of vegetable soup — without the cream to weigh you down.

Ingredients

  • 1 tsp 1tspvegetable oil
  • 1 1oniononions, chopped
  • 2 2carrotcarrots, chopped
  • 2 2cloves garlic, minced
  • 1/2 tsp 1/2tspdried thyme
  • 1/2 tsp 1/2tspdried oregano
  • 3 cups 3cupschicken stock or vegetable stock
  • 1 1potatopotatoes, peeled and chopped
  • 2 cups 2cupschopped broccoli
  • 1 cup 1cupfrozen peas
  • 1 cup 1cupmilk
  • 1/2 tsp 1/2tspsalt
  • 1 Pinch 1Pinchpepper

Preparation

In large saucepan, heat oil over medium heat; cook onion, carrots, garlic, thyme and oregano, stirring occasionally, for 5 minutes or until onion is softened. Add stock, potato and broccoli; bring to boil. Reduce heat, cover and simmer for 15 minutes or until potato is very tender. Add peas; cook for 5 minutes.

Pour half into blender, pur?until smooth. Return to saucepan. Stir in milk, salt and pepper; heat until steaming.
