Cocktail Sauce

Tested Till Perfect

Flavourful little sauces not only dress up oysters but also offer delicious introductions to first-time oyster eaters. Each sauce is enough for one dozen shucked oysters.

Servings: 1/3 cup (75 mL)

Ingredients:

    1/4 cup (50 mL) tomato sauce
    2 tbsp (25 mL) prepared horseradish
    2 tsp (10 mL) each lemon juice and hot pepper sauce
    Pinch each granulated sugar, salt and pepper

Preparation:

In bowl, combine tomato sauce; horseradish; lemon juice; hot pepper sauce; sugar; salt and pepper. (Make-ahead: Cover and refrigerate for up to 24 hours.)
