Christmas colours and a mint accent add a special sparkle to peas.
Ingredients
- 1/4 cup butter 1/4 1/4cup cupbutter
- 2 tbsp chopped fresh parsley 2 2tbsp tbspchopped fresh parsley
- 1 tbsp dried mint 1 1tbsp tbspdried mint
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/2 tsp pepper 1/2 1/2tsp tsppepper
- 1 sweet red pepper , diced1 1sweet red peppersweet red peppers, diced
- 6 cups frozen peas 6 6cups cupsfrozen peas
Preparation
In bowl, combine butter, parsley, mint, salt, pepper and red pepper. (Can be covered and refrigerated for up to 24 hours or frozen in airtight container for up to 2 weeks.)
In saucepan of boiling water, cook peas for 2 to 3 minutes or just until tender. Drain and return to pot. Toss with red pepper mixture to coat. Transfer to serving dish.
