If you're looking to get more vegetables into your diet, adding zucchini to your menu is a great start. Healthy zucchini is one of the most versatile vegetables. Not only does it go with most flavours, it's also perfect to include in your main course, appetizer and side dish, or to enjoy as a healthy snack.

How to bake zucchini for lunch or dinner
Stuck on what to make for lunch or dinner? Tossing zucchini into traditional meals like lasagna and casserole is a great way to spruce up your regular menu. Cut zucchini into thin slices, top with some parmesan cheese and layer it into a classic lasagna or a meat loaf casserole (see recipes below) before baking it. It'll give your meals a delectable new taste -- and a healthy twist.

How to bake zucchini for a side dish
Zucchini is also great as a light side dish. Replace calorie-packed fries for scrumptious baked zucchini fries (recipe below). All it takes is mixing up zucchini slices with bread crumbs, flour, eggs and garlic powder. Then pop them in the oven for about 20 minutes.
