Thanksgiving dinner help live from the Canadian Living Test Kitchen

By: Canadian Living

On Tuesday, October 8, 2013, the Canadian Living Test Kitchen tackled all your questions about how to cook a turkey in our Google+ Hangout. Here's what they said:

And here's the recipes they mentioned: Annabelle pointed out that gravy can fix a lot. Here's our Foolproof Gravy. We also discussed brining the turkey, so try our Cider-Brined Turkey with Gravy.  Bacon and its place in the meal came up, and our Test Kitchen suggests you add it to a side. Try our Bacon Apple Stuffing with Chestnuts. Sausage stuffing came up too: Shallot Sausage Stuffing.

If you want to learn how to carve a turkey, watch our how-to video here, and carve it in the kitchen so you don't feel stressed.

Also, a mystery solved: It's stuffing if you stuff it into the turkey; it's dressing if you cook it in a separate dish.

To help you out with Thanksgiving and other holiday meals, our Test Kitchen staff created a series of Google Hangouts to tackle your questions. Our first was on Thanksgiving menu planning and you can watch it below.

Recipe highlights from our Google Hangout on Thanksgiving menu planning: Our special make-ahead menu, Easy Roll Pie Dough, Pumpkin Praline Tiramisu, Gluten-Free Pie Crust. Bulgur-Stuffed Acorn Squash, The Ultimate Potato Gratin, Crunchy Parmesan-Topped Double Potato Mash.

For our final live cast of the Thanksgiving season, the Test Kitchen tackled desserts. Here are their picks, tips and tricks as they answered your questions about a great finale to your meal.

Recipes mentioned: Dairy-Free Gluten-Free Molten Chocolate Lava Cakes, our Fresh Pumpkin Pie recipe (of course) and the idea of a Pumpkin Marble Cheesecake came up, along with Classic Apple Pie -- or even an apple cake like Marie-Hélène's Apple Cake

The Test Kitchen said their favourite pumpkin dessert recipe hands-down is our Pumpkin Praline Tiramisu recipe. It came up several times.

Looking for a lighter dessert? Brown Sugar Roasted Fruit is one idea, and so are Maple Spice Poached Pears.

Pro tip if you're tackling a pumpkin recipe: Use a sugar pumpkin and not the big pumpkins.

Scared of pastry? Listen to the tips in the video but also try our No-Fail Pie Crust recipe.

On Wednesday October 9, 2013, our Test Kitchen answered your questions about creating great side dishes, sauces and gravies. Here's the video!

Recipe highlights for Wednesday:
Rheanne mentioned corn bread, so here's our Roast Turkey with Pecan Corn-Bread Stuffing. Irene voted for mashed potatoes, and we've got Roast Garlic Mashed Potatoes, and Chive and Parsley Mashed Potatoes. You can mix it up with this Sweet Potato Mash with Pecan Streusel recipe.

Stuffing came up of course: Try 3 scrumptious stuffing recipes here. Jen talked about this amazing (and easy!) Pomegranate Spinach with Garlic Chips recipe.

Our panel agreed making your own cranberry sauce is worth it (and you can do it in advance!) Try our Spiced Whole Cranberry Sauce if you want to give your own a go. Lumps in the gravy also came up: Here's our Foolproof Gravy method, but watch the video for more tips.

How to make brussels sprouts appealing? Add bacon. Try the Bacony Brussels Sprouts here, Whisky-Glazed Brussels Sprouts or Creamed Brussels Sprouts.

Another great side that focuses on the bounty of the Canadian fall harvest: Roasted Chili Lemongrass Squash.
