Spice mixes

Santa Fe Spice Mix:
3 tbsp (50 mL) chili powder
2 tbsp (25 mL) each ground coriander and cumin
1 tbsp (15 mL) crushed fennel seeds
1 tbsp (15 mL) dried oregano
2 tsp (10 mL) salt
Makes about 1/2 cup (125 mL).

Greek Spice Mix:
3 tbsp (50 mL) dried oregano
2 tbsp (25 mL) dried mint
1 tbsp (15 mL) each ground cumin and pepper
2 tsp (10 mL) each salt and cinnamon
Makes about 1/2 cup (125 mL).
