This flavoured oil will quickly become a kitchen staple in your household. Use it in place of plain oil when making salad dressings, drizzle it over your favourite noodle dish or brush it onto pizza crust, steak, chicken or fish.

- 1 cup vegetable oil
- 4 cloves garlic , finely grated or pressed
- 1 tablespoon thinly sliced Thai bird's-eye peppers (about 4)
- 4 teaspoons sesame oil
In saucepan, heat 3 tbsp of the vegetable oil over medium heat; cook garlic and ai peppers, stirring, until garlic is fragrant and ai peppers are so softened, about 2 minutes. Add remaining vegetable oil and sesame oil; cook until oil is warm but not hot. Let cool completely, about1 hour.
Strain oil through fine-mesh sieve; discard solids. (Make-ahead: Refrigerate in airtight container for up to 2 weeks.
Tip from The Test Kitchen: For a more fragrant, flavourful oil, skip straining and leave in the ai peppers and garlic before serving or bottling.
