• Bread machine dough is much lighter in texture than handmade dough. Let it rest between rolling because it will be more elastic than handmade dough.

• Bread machines give best results with quick-rising dry yeast. It is specially formulated to be added to dry ingredients and to dissolve and activate immediately.

• Bread machine yeast is a particularly active strain of yeast with increased levels of ascorbic acid (vitamin C). It was developed specifically for use in bread machines. Use the same measurement as for quick-rising dry yeast. Store yeast in the refrigerator and always check the expiry date before using.

• Have all the ingredients at room temperature for best results.
