Nuts are a heart-healthy snack. Keep them fresh with these tips.

• To ensure freshness, buy nuts from a store with a high turnover. If possible, sample before buying.

• In cookies, most nuts taste better if they're toasted. To toast whole nuts, spread single layer on rimmed baking sheet; toast in 350º F (180º C) oven (or toaster oven for small amounts) for 8 to 10 minutes or until fragrant and darkened slightly. Watch carefully: nuts brown quickly once they're hot. Chopped nuts need less time.

• To toast nuts in the microwave, spread on microwaveable plate; microwave at High for 5 to 10 minutes or until fragrant, stirring about every 2 minutes. Reduce time for chopped nuts.

• To remove skins from hazelnuts, rub hot toasted hazelnuts in clean tea towel until most or all of the skins are removed. If you like the colour and taste that the toasted skin adds to cookies, rub lightly to retain some of the skins.

• Store nuts in airtight container in freezer (for up to several months) to ensure freshness.
