Boiling Water Canners
A boiling water canner is simply a big pot with a rack in the bottom and a tight-fitting lid. The base should be deep enough to hold jars (without touching) and allow 1 inch (2.5 cm) of water to maintain a rapid, rolling boil without boiling over. Flat bottoms work on both gas and electric burners. Ridged bottoms are more efficient on gas burners but are not recommended for glass-top stoves. Black porcelain-coated steel pots (often equipped with racks) are popular choices because they are inexpensive, lightweight and the right size for the job.
