Hamantaschen (also known Haman's Ears in Israel, or Haman's Hat in North America) are filled triangular cookies baked especially for Purim, a joyous Jewish festival celebrating the overthrow of the evil Haman. Children don costumes and deliver gifts of food - such as these cookies - to family and friends.

Hamantaschen

Recipe servings: 50 cookies
1 cup (250 mL) unsalted butter
2 cups (500 mL) granulated sugar
2 tsp (10 mL) grated orange rind
2 eggs
3-3/4 cups (925 mL) all-purpose flour
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) salt
Poppy seed Filling:
1 cup (250 mL) poppy seeds
1 cup (250 mL) milk
1/4 cup (50 mL) hot water
1/2 cup (125 mL) granulated sugar
1/4 cup (50 mL) finely chopped raisins
2 tbsp (25 mL) liquid honey
1 tbsp (15 mL) grated orange rind
1/4 tsp (1 mL) cinnamon
Pinch salt
