How to rise dough: Step 3

To test whether dough has risen sufficiently, push two fingers into it. If the impression remains after you remove your fingers, move on to the next stage. If not, re-cover the bowl and check at 10-minute intervals until the dough passes the indent test.

With closed fist, gently press down dough to remove air. Pull dough from side of bowl, turning over and forming a ball. This is called “punching down” the dough, but gentle pressure is better than a rough punch. Ideally, cover and let dough rest for 10 minutes before shaping.
