Sweet grean peas

Fresh, sweet green peas are available, either still in their inedible pods or already shelled in bags, in supermarkets and farmer's markets from mid-June through July. Look for bright green pods with firm peas that aren't bulging out of the pods.

For the best flavour, use peas as soon as possible after harvesting. As peas sit at the store or in the fridge, their natural sugars convert to starch, making them chewy and less flavourful. If you must store them, refrigerate in perforated plastic bag for up to two days.

One pound (500 g) pea pods yields about 1 cup (250 mL) shelled peas.

Shell peas by breaking the upper part of the pod open and splitting down the seam to expose peas. Run fingers along inside of pod to release peas.
