Gluten-free baking ingredients

Many gluten-free recipes (such as these Gluten-Free Fruity Oat Muffins) require a few ingredients you might not be familiar with. Here's what you need to know about them, plus a couple more you may want to have on hand for gluten-free baking.

Xanthan gum: A white, powdery starch made from corn or cabbage, xanthan gum is added to gluten-free flour to give structure to baked goods, especially pastries and breads. Look for it near gluten-free flours.
