White Chocolate Pumpkin Mousse Tarte ingredients:
• 40 (10 oz/300g) gingersnap cookies
• 1/2 cup (125mL) butter, melted
Filling:
• 2 pkg unflavoured gelatin
• 1/4 cup (50mL) dark rum or water
• 4 eggs
• 3/4 cup (175mL) packed brown sugar
• 2 cups (500mL) pumpkin purée
•1 tsp (5mL) cinnamon
•1/2 tsp (2mL) each ground ginger, nutmeg and salt
• 4 oz (125g) white chocolate, finely chopped
• 1/2 cup (125mL) pasteurized egg whites
• 1/4 cup (50mL) granulated sugar
• 1/2 cup (125mL) whipping cream
Garnish:
•1/2 cup (125mL) whipping cream
• Marzipan Pumpkins and White Chocolate Pumpkins and Shards
