Sometimes overlooked, beets are low in cost but high in flavour and nutritional value.

Beets are a great source of folate, with one serving providing nearly one-third of the 230 mcg daily requirement. They are also high in vitamin C, potassium and fibre.

Nutrition Information:
Beets are a high-sugar vegetable that are low in calories; one cup has about 55 calories. Make use of the whole plant because the root is a source of vitamin C and folate, while the greens contain potassium, calcium, iron, and carotene. Like all vegetables, beets are a source of fiber and do have a laxative effect on some people.
