Country Spinach Toss
This recipe makes 4 servings
Ingredients
- Salad
- 4 cups spinach
- 6 sliced mushrooms
- 5 sliced radishes
- 10 halved cherry tomatoes
- Dressing
- 2 tbsp wine vinegar
- 1 tsp Dijon mustard
- 1 minced clove of garlic, optional
- 1/4 tsp granulated sugar
- 1/4 salt
- 1/4 pepper
- 2 tbsp vegetabIe oil
- 2 tbsp light mayonnaise
- 1 tbsp chopped fresh basil
Preparation
Salad: In salad bowl, combine mushrooms, radishes and cherry tomatoeswith spinach.
Dressing: Whisk togetherwine vinegar, Dijon mustard, garlic, sugar, salt and pepper. Whisk in vegetable oil. Whisk in mayonnaise and basil.
Toss salad with dressing and serve.
Additional information :
Make A Meal:
2 Grilled chicken breats, sliced or 2 cups (500 mL) cubed cooked chicken.
Top salad with chicken and serve.
Makes 2 main-dish servings.
