Couscous Pilaf
Couscous is sure to intrigue young cooks. You don't need to turn on the stove to cook it; just heat the stock in the microwave or use boiling water from a kettle.

Suggested Recipes

1 small zucchini
1-1/2 cups (375 mL) vegetable or chicken stock
Pinch salt
1 cup (250 mL) whole wheat couscous
2 tbsp (25 mL) shelled sunflower seeds or chopped almonds
Preparation:
Trim ends off zucchini. Grate zucchini against large holes of grater. Set aside.
In covered saucepan over high heat or in large liquid measure, bring stock and salt to boil. Remove from heat; stir in couscous and zucchini. Cover and let stand for 5 minutes. Sprinkle with sunflower seeds. Fluff with fork.
