Ingredients

- 1 carrot , finely chopped1 1carrotcarrots, finely chopped
- 1/2 sweet red pepper , diced1/2 1/2sweet red peppersweet red peppers, diced
- 1/4 tsp dried thyme 1/4 1/4tsp tspdried thyme
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 1-1/2 cups vegetable stock 1-1/2 1-1/2cups cupsvegetable stock
- 1 cup couscous 1 1cup cupcouscous
Preparation
In small saucepan, heat oil over medium heat. Add onion, carrot, red pepper, thyme, salt and pepper. Cook, stirring, for 5 minutes or until softened. Add stock; bring to boil. Add couscous. Cover and remove from heat. Let stand for 5 minutes. Fluff with fork.
Pack into six 6-ounce (175 mL) greased ramekins or timbale molds and reverse onto plate.
