2 tbsp (25 mL) butter
3 green onions, sliced
1 clove garlic, crushed
1 bay leaf
4 cups (1 L) frozen or fresh corn kernels
1/4 tsp (1 mL) each salt and pepper
1 tbsp (15 mL) all-purpose flour
1 cup (250 mL) 10% cream
Preparation:
In saucepan, melt butter over medium heat; cook green onions, garlic and bay leaf, stirring often, until fragrant, about 2 minutes.
Stir in corn, salt and pepper; cook, stirring often, 5 minutes for frozen, 7 minutes for fresh.
Sprinkle with flour; cook, stirring, for 1 minute. Whisk in cream; simmer until thickened, 3 minutes. Discard bay leaf.
Transfer one-third to blender; purée until smooth. Return to saucepan and stir to combine.
