Crispy Oven Fries

These are a tasty low-fat version of frozen fries. Scrub potatoes but leave the skins on for the most nutrients. For variety, use peeled sweet potatoes.

Ingredients

  • 1-1/2 lb potatoes
  • 1 egg white
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

Cut potatoes into thin wedges. In large bowl, beat together egg white, salt and pepper; add potatoes and toss to coat.

Arrange in single layer on greased baking sheet; bake in 500°F (260°C) oven, turning once, until tender and golden, 20 to 25 minutes.

Variations
For extra appeal, add any of these seasonings to the egg mixture.

Cajun Fries: 1 tbsp (15 mL) Cajun seasoning; 1/4 tsp (1 mL) dried oregano.

Spicy Cheese Fries: 1/4 cup (50 mL) grated Parmesan cheese; 1/4 tsp (1 mL) cayenne pepper.

Sesame Fries: 2 tbsp (25 mL) sesame seeds; 1 tbsp (15 mL) soy sauce; 1/2 tsp (2 mL) dried cumin.
