Crostini are crisply toasted buttery fingers of bread and cheese. We've used Parmesan, Gruyere and provolone, but you can substitute any firm, full-flavored cheeses you have on hand. You can prepare Crostini earlier in the day and bake or broil them just before serving.

Ingredients

  • 10 Italian bread or French bread or white bread, (homemade white bread)
  • 1/4 cup butter
  • 1 small garlic clove, minced
  • 1/2 cup grated provolone cheese
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup freshly grated Parmesan cheese

Preparation

Cut each bread slice lengthwise into thirds and place on baking sheet. Toast in 350°F (180°C) oven for 12 to 15 minutes, turning once, until golden and crisp on both sides.

Blend together butter and garlic and spread over bread. Combine cheeses and sprinkle evenly over bread. (Crostini may be made ahead to this point, covered and refrigerated.) Bake in 400°F (200°C) oven for 10 minutes or broil about 4 inches (10 cm) from heat for 2 to 4 minutes or until cheese is bubbly.
