Candied, dried and rolled in sugar, crystallized ginger is the pride of Australia's thriving ginger industry. The best medallions are cut from the tender heart of the baby ginger rhizome and are enjoyed plain or dipped in chocolate.

Ingredients

  • 1/3 cup 1/3cupcoarsely chopped crystallized ginger
  • 6 cups 6cupsvanilla ice cream

Preparation

Fold crystallized ginger into ice cream. Sprinkle a little more over each serving, if desired.
