The refreshing flavor of mint perks up cucumber slices.
Ingredients
- 2 medium cucumbers , peeled2 2medium mediumcucumbercucumbers, peeled
- 1-1/2 tsp salt 1-1/2 1-1/2tsp tspsalt
- 1/3 cup thinly sliced green onions 1/3 1/3cup cupthinly sliced green oniongreen onions
- 2 tbsp finely chopped fresh mint 2 2tbsp tbspfinely chopped fresh mint
- 2 tbsp lemon juice 2 2tbsp tbsplemon juice
- 2 tbsp olive oil 2 2tbsp tbspolive oil
- 1 tsp white wine vinegar 1 1tsp tspwhite wine vinegar
Preparation
Halve cucumbers lengthwise; remove seeds and slice thinly. In sieve, sprinkle cucumbers with salt ; let stand for 30 minutes. Rinse under cold running water and pat dry with paper towels. In bowl, toss cucumbers with onions, mint, lemon juice, oil and vinegar. (Recipe can be prepared ahead and refrigerated for up to 8 hours. Bring to room temperature before continuing.) Taste and adjust seasoning.
