Firm, thin sandwich bread is ideal for these party pleasers. They look prettiest when the bread is cut before topping. However, for speedier prep, top the whole slices, then bake and cut into triangles.

Ingredients

  • 2 cups diced cooked chicken 2 cups diced cooked chicken
  • 3 tbsp light mayonnaise 3 tbsp light mayonnaise
  • 1 rib celery , finely diced1 rib celery, finely diced
  • 2 green onions , finely diced2 green onions, finely diced
  • 2 tsp lemon juice 2 tsp lemon juice
  • 1 tsp curry powder 1 tsp curry powder
  • 1/4 tsp salt 1/4 tsp salt
  • 1/4 tsp pepper 1/4 tsp pepper
  • 7 slices firm white sandwich bread 7 slices firm white sandwich bread or whole wheat sandwich bread
  • 3/4 cup shredded Cheddar cheese 3/4 cup shredded Cheddar cheese

Preparation

In bowl, stir together chicken, mayonnaise, celery, green onions, lemon juice, curry powder, salt and pepper.

On baking sheet, broil bread for 1 minute. Turn over and cut each into 4 triangles.

Divide chicken mixture among triangles; sprinkle with cheese. Broil until cheese is melted and bubbly, about 3 minutes.
